Low carb crispy chicken tenders

This is so easy and delicious! The pork rinds have such good flavor!

Ingredients:

  • Chicken breast tenders
  • 1/2 cup pork rinds
  • 1/3 cup Parmesan cheese
  • 1 egg
  • 1 tsp pepper
  • 1 1/2 tablespoon olive oil

Instructions:

  1. Preheat oven to 375 F
  2. Crush pork rinds in a ziplock bag
  3. Combine crushed pork rinds, Parmesan cheese and pepper
  4. Crack egg in another bowl
  5. Dip each chicken tender in egg bowl first, then into the pork rind/Parmesan cheese mixture until coated
  6. Drizzle olive oil over all chicken
  7. Bake for 15 minutes
