Low carb cream cheese cookies

Perfect for the holidays!

Ingredients:

  • 1 cup butter
  • 3/4 cup xylitol or sugar substitute
  • 4 ounces cream cheese
  • 1 egg
  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 1 teaspoon vanilla extract

Instructions:

  • Cream the butter and xylitol in a hand held mixer unti mixed throughly
  • Add the cream cheese and mix
  • Add in egg
  • Once the wet ingredients are mixed, stir in the flours
  • Add in the vanilla
  • Chill the dough in the fridge for 4 hours
  • You can either roll the dough into a log and cut into cookie shape, or roll it all flat and use cookie cutters to make your own design
  • Bake at 350 F for 15 minutes
  • These are soft cookies, so I like to store them in the fridge or freezer
